Welllllllllll.....consider what both your parents like and feel comfortable eating as well as your boyfriend. What would be great is if both parties liked the same thing! So, how about a mix and match dinner, where you purchase some items and make others. Here are some ideas:

Menu I

Sushi
Miso soup
Teriyaki chicken
Rice
Salad with ginger dressing
Lemon sorbet

Menu II:

Sushi and sashimi
Sunomono
Grilled sirloin steaks
Grilled asparagus
Rice
Mochi

Menu III

Shu Mai
Gyoza
Grilled tuna with spicy aioli
Salad with ginger dressing
Rice
Chocolate lava cakes

Menu IV

Sushi
Prawn salad with seaweed
Yakatori chicken with dipping sauce
Rice
Tempura veges
Ice cream pie

EVERYONE loves steak :)

just buy a pack of angus steaks (sams club for like 14$) a little salt and pepper, stick them in the oven on 350 for 20 minutes.. flip.. keep them there for another 15 and you got yourself a medium-well steak.. keep them a little longer for well done, or a little shorter for medium-rare

get a few corn on the cobs (1 per person.. ) and boil them with some salt until they turn bright yellow (of course peel them!) OR if you want the easy way out, buy canned corn (not canned creamed corn!) and you can heat that up with a little bit of the steak grease ..

buy a loaf of italian bread (1-2$) and cut it into 1" slices and that will work too!

and make a basic lettuce-tomatoes-onions salad with a premade salad dressing! just cut up all the ingredients to about 1" pieces.

and you got yourself a meal! (i would also pre-buy the dessert! you have enough things to worry about, so make something SIMPLE and universally loved..)

if steak isn't an option.. maybe salmon, or meatloaf.. or pasta..

do your parents like sushi? i wouldn't serve something that may not please everyone.. the last thing you want would be a sourpuss on the table.. or someone getting food poisoning.. if you've never made sushi before DO NOT attempt it now.. not unless this dinner is a month or so away..

Cook what you know you make well. He will eat it and I'm sure he will like it. I wouldn't recommend getting store bought sushi, it's rarely any good. You might as well just go to a Japanese restaurant.
