Pesto Di Basilico
2 oz. fresh basil leaves
1 cup extra virgin olive oil
2 tablespoons pinenuts
2 cloves garlic, peeled
salt
1/2 cup freshly grated parmigiano-reggiano cheese
8 tablespoons grated pecorino romano cheese
3 tablespoons butter, softened to room temperature
1 pound fettucini, spaghetti, or spaghettini
1. Put the basil leaves, olive oil, pine nuts, garlic, and 1 teaspoon of salt into a food processor or blender and grind until fine and almost creamy.
2. Transfer the mixture to a large bowl and stir in the two grated cheeses.
3. Bring 4 quarts of water to a boil in a large saucepan or pot. Add 1 tablespoon of salt and the pasta, stir well and cook until al dente. Drain and toss with the sauce, two tablespoons of water from the cooked pasta and the butter.
You can always add some shrimp, artichoke hearts (not marinaded) and/or kalamata olives for further texture and flavor.

Any seasonal vegetables - I like steamed baby carrots and beans or nice corn on the cob! Or you could try a simple garden salad and fresh bread or grilled steak or chicken would go nice!
I'd go with something green, some green beans, make then zippy them with a little onion and almonds, bacon and onion is good, too.
asparagus or broccoli would be nice too. And I adore frozen peas.
A fruited green salad would work, or some apple salad would be nice.
Carrots would be great, just put a little sugar in the water to bring out their sweetness.
apples go nice with cheddar cheese. Some applesauce, some cooked apples with a bit of brown sugar and butter and cinnamon, even a dessert of apple pie or crumble. Baked apples are easy, make them with red hots, or put a bit of brown sugar, butter and cinnamon down the center where you have removed the top 3/4 of the stem.
allrecipes.com has a lot of good veggie and veggie casserole recipes.
You need some color, how bout some grilled peppers? Cut red and green bell peppers into long strips, then brush with some olive oil and throw on the grill or make kebabs with the peppers, purple onions, and some halved roma tomatoes. You could do these on a cast iron grill pan, or in the foreman grill too!
You could also mix in some pasta with your cauliflower and cheese. Penne? Rotini?
Last suggestion is to combine your cauliflower and cheese with prepared rice (maybe leftover rice), then sprinkle some bread crumbs on the top and bake it like a casserole.
