What's the healthiest way to eat fruits and vegetables OTHER THAN FRESH?

I have this weird allergy thing called "Oral Allergy Syndrome" and it basically tricks my immune system into thinking I'm allergic to certain foods that have proteins that are structurally similar to birch pollen (which I AM allergic to). So, with most fruits and vegetables, if I eat them fresh, I get a pretty painful allergic reaction to it. But, if I cook it or just do something to alter it, I can eat it with no reactions.

So! Since I can't eat fresh fruits and vegetables...what's the next healthiest way to prepare these foods?

Steam them. This is considered "cooking" them, and doesn't really change much about the fruit or veggie other than that it is cooked through. It maintains the taste really quite well. This is probably better for the veggies, because fruit isn't always that great when it's steamed...

... you could also freeze the fruit. I'm obviously no expert on your situation, but this should do the same thing as cooking, and if you eat it while it's still deeply frozen it should have quite a nice flavor!

For something different you can try grilling your fruits and your vegetables. Both are generally really good with that charcoal grilled flavor. The difference is that the food won't maintain it's integrity as well, but the added flavor just might suit you.
