Why is it that pure maple syrup is considered "healthier" than refined sugar...

...(in baking, cooking etc)? they both have a lot of sugar...?

Maple syrup and Agave nectar are both boiled down to make their concentrated syrup's. Maple is made from just Maple sap, and Agave is made from just agave sap. Agave is a little more affordable then maple syrup and generally thicker.

Sugar is processed from sugar cane, then whiten with beach, it's that process that make Splenda,
When the beach is sprayed on the sugar, it's that run off which is collected and dried to a white powder call splenda.

Pure maple syrup still has some nutrients in it from the maple tree.

Refined sugars are broken down to just the sugar.

The presence of these nutrients technically make maple syrup healthier, but sugar is sugar, and should be limited to small amounts in your diet :).

Refined sugar has all the good stuff taken out and only the sweetener is left. That is bad. Unadulterated Honey, Maple syrup, Maple sugar, Coconut sugar, Stevia and Agava Nectar are all better for you. But the rule for life is "Everything in Moderation". Too much sugar you get Diabetes, fat and die. To much red meat you have a heart attack. Too much white bread you get diabetes, fat and die. Too much Iron in your blood will kill your. You can also drink enough water that you have to be hospitalized and may die.
