When doing a search, the results appear with a link called "cached " such as this:

Yahoo! Mail: The best web-based email!Get free web-based email from Yahoo! Access email from anywhere, enjoy unlimited storage space, and feel secure with award-winning spam protection.
mail.yahoo.com/ - 26k - Cached - Similar pages - Note this

Not where it says cached above next to the 26K. When you click Cached, it shows the page as it existed in the past. I recently had personal info posted on someone's webpage. They have finally at my insistence taken it down. However, when I do my name search, the item still appears in the search results in the "cached" page. Even though the page-owner removed it, will the old version remain in "cached" forever?

Not on search engines. They will eventually update their caches. However, if the page has been cached on http://archive.org they won't erase it.

Probably not, but in this case, you should contact the company, and REQUIRE them to put the following code in ther page:
<META NAME="ROBOTS" CONTENT="NOARCHIVE">
Also contact Google and ask them to remove that cached version. Also, make sure to check The way back archive as well. http://www.archive.org. If you are having trouble, you might consider getting a lawyer to help you if the information is sensitive enough. Good luck.
