peppers

I would like to make stuffed bell peppers tonight without using any meat. Just interested in your opinions. I thought I might use ricotta cheese, black beans and onions with spaghetti sauce on top. What are some other creative ideas?

Is there any nutritional difference between these peppers? Also, they all taste the same to me, so why do recipes call for one and not the other(s), or just leave pepper choice as arbitrary?

I'm just worried about my health is all. It's probably really common in other countries than my own. Should I stop or slow down? I eat a serrano pepper or a jalapeno pepper with just about ever thing, and if i'm craving the heat i eat them alone.
