I'm cooking filet mignon in an hour on a gas stove. "high" setting is a 7 and the... ..."low" is 1. what # to sear? Just curious to find out what number setting I should have the stove at to sear and seal in juices before placing in the oven? Im gussing around a 5. Medium high heat?
