35 DEGREE PITCH UP or 60% N1 THRUST during take off.. What's safer?

I play flight simulator so much and have come to a conundrum :
When taking off the Boeing 747 with the least weight (few needed pounds and everything else empty), after 'rotating', should I pitch it up to 35 degrees angle to maintain the speed (because it tends to accelerate dramatically) during the initial climb or simply reduce the thrust to 60% N1 or as needed after 'rotating' up to keep the speed in control or should I just compromise between the two. Dramatic increase in speed contributes to difficulty in keeping the plane within speed limit below 10,000 feet and the difficulty to retract flaps 'on schedule'. All this happens because of the light weight of the plane. Please answer me and explain to me as openly and as excruciatingly as possible!
