Slice Eggplant about 1/2 inch thick. Top with garlic and pasta sauce. Put onion and mushroom on top of that. Spread grated mozzarella cheese on top. Bake at 300 degrees until hot all the way through.
This is one I really like. Take inside of spaghetti squash and rinse thoroughly and set aside. Slice up fresh garlic, mushroom and onion. Put olive oil in high sided frying pan and heat. When hot put in garlic, mushrooms and onion. Saute, then add the spaghetti squash. Add pasta sauce and heat thoroughly. Serve with garlic bread and parmesan cheese. Oh...don't forget a nice Merlot on the side.
