Well, I'm not sure if this is the one that you are talking about, but this is a very tasty one that I know:
Makes 2 peppers
Ingredients:
2 green bell peppers
1 beef tomato
100g crumbled goats cheese
1 mug of couscous
Salt and pepper to taste
1 large white onion
1 tin peeled plum tomatoes
A 'glug' of cream
Fresh chopped basil
Method
1. Preheat the oven to 170C
2. Boil the couscous according to the instructions in the packet and drain throughly. Finely dice the onion and sweat off in a little butter or oil, and combine with the couscous. Crumble in the goat's cheese and finely dice and de-seed the tomato. Add the tomato to the stuffing and mix thoroughly, and season with salt and pepper.
3. Cut the top off the green peppers and remove any extra seeds. Add the stuffing equally between both peppers, and bake peppers in the preheated oven for 45 minutes or until soft.
4. Make the sauce by heating the tinned tomatoes with salt, pepper, cream and basil. Serve with the peppers.
Enjoy!
Drizzle remaining 1 tablespoon of olive oil inside the peppers. Arrange the cut side of the peppers up in a baking dish, then stuff peppers with filling. Combine ketchup, Worcestershire sauce, Tabasco sauce, and 1/4 cup of water in a small bowl, then spoon over filling. Add 1/4 cup of water to the baking dish. Place in oven and bake for 40-50 minutes (or longer, depending on how big the peppers are that you are stuffing), until the internal temperature of the stuffed peppers is 150-160°F.
