Asian Rice: How to cook it so that it becomes very tender?

Chinese Fried Rice

1/2 cup finely chopped carrots
1/2 cup frozen peas, thawed
2 1/2 tablespoons oil
2 cups bean sprouts
2 tablespoons light soy sauce
3 drops sesame oil
3 drops soy sauce
3/4 cup finely chopped onions
4 cups cold cooked rice, grains separated
8 ounces chicken, chopped
8 ounces cooked lean boneless pork, chopped
eggs, lightly beaten
green onion, chopped
Prep: 10 min Cook: 18 min Directions
1Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
2Allow wok to cool slightly.
3Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
4Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
5Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
6Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
7Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
 
traditionally you steam it.
a steamer has two pots. its similar to a double boiler but it has holes on the base of the top pot.
first soak your rice in hot water if you're soaking for a short time, or cold water when you have the time.
wash the rice and put it into the steamer top.
boil water into the bottom pot. when the water boils add on the top pot and cover. let it steam until it's dry to the touch.
get a big bowl that can hold the rice and boiled water.
empty the top pot and put the rice in the bowl add the water.
boil some new water in the second pot.
stir the rice and water. you'll have to soak it for a few minutes. you want it tender but not fully cooked.
strain the rice until the water is gone.
place the rice back on the steamer and steam until its dry and cooked.
enjoy!!
of course this is a long process but its worth it if you eat a lot of rice like me. plus steamed rice is different from rice from a rice cooker or that is boiled.
you can find steamers at the Asian store or online.
