We already practice the shabbat

Contact your local Orthodox Rabbi.
There are several Chabad Houses around Spain: Barcelona, Costa Del Sol-Marbella, Valencia,
(Chabad-a Orthodox, Hasidic group that set up outreach centers around the world)

Most Orthodox conversions take up to 3 years. If your husband is already circumcised, then he obviously doesn't need to do that again (to the full extant. I think he will still need to do something though)
I suggest talking to an Orthodox Rabbi to get all the information, and take this slowly and seriously. Converting to Judaism is a difficult (but rewarding if you go through with it) task that takes time and study.

Also, I don't believe its permissible to keep the Shabbat (according to the Halacha laws and 39 laws of Shabbat) if you aren't Jewish. You should speak to a Rabbi concerning this.
