it's very tiring.? I'm thinking of learning to ride a motorcycle, and I was wondering if I'd be able to ride it from Philly to NYC, a commute I make about twice a month. What are your thoughts?

The better shape you're in, the better it will be. My friends that ride sportbikes are all good athletes and can ride a couple of tank fulls every month for fun. They do take a while at gas stops to stretch and hydrate for about 15 minutes. For them, gas stops are about 2hrs apart. As for me, I notice that I get less fatigued in traffic, as opposed to out on the lonely open stretches.

You can do it, but if you are doing it every few weeks, there are better choices out there than a pure sport bike. Last year I had a GSXR and a Buell Cyclone. I loved the GSXR, but if I was going more than 100 miles the Buell was always the one I took. In fact, it was one of the most comfortable bikes I ever owned for medium length touring. Maybe something like a Triumph Street Triple would work for you? Honda Interceptor?
