I have a Specialized Hardrock sport an was wondering if it was possible to switch the wheels to skinny for none mountain biking purposes when I'm not mountain biking, then switch it back when i go mountain biking, if it is how and what wheels do you suggest?

Hybrids are 700c, your bike is probably 26inch. The easiest way is to switch the tires. If you had
different wheels, you would need:

Adjust the derailleur
Adust the brakes

See? Easier to learn to change the tires quickly.

You have to stick with 26" wheels.

Why not just buy a pair of 26" smooth tread narrow road tires? Changing a tire does take longer than a wheel, but the investment is a lot less (you would need narrow tires anyway, right?). Instead of 2 minutes you would spend maybe 20 minutes. I do agree with 2 wheel sets if you plan on back and forth a couple times a week. Buy similar to what you already have. Maybe an upgrade pair for mountain biking since they take the punishment. Use the stock wheels for road work.
