butter would be better! If you have to use margarine, add a little to the pan until it melts (slow, low heat) and let some of the water in it evaporate. Then toss the veggies and add more if you think it's not coated.
watch it carefully! margarine may burn or react differently to the higher temp!
are you feeding a small ARMY? that's probably enough for 10 fajitas.... but, margarine is OK to use if you don't have oil... I prefer OLIVE OIL over anything when I'm frying up my onions and peppers.. but whatever floats your boat... for all those peppers and onions, I would say at LEAST 3/4 of a stick of Margarine,... if you aren't using stick margarine then two hefty tablespoon or more.
