They have, but apple wont let them. apples SDK (iphone developer guide) denies apps into itunes that mimic the functionality of their official apps.
You will never have a better media player, internet browser, sms app, etc unless apple makes it.
Apple thinks sms is an outdated technology, so its safe to say it will never happen.
