Title: Aubergine Puree - Kyopolu - Bulgaria
Yield: 1

Ingredients

2 aubergines; (2 to 3)
4 peppers; to 5
2 tomatoes; to 3
3 cloves garlic; (3 to 4)
1 parsley
1 vinegar
1 sunflower oil
1 salt

Instructions

Bake the aubergines and peppers on a hot plate, peel and cut into small
pieces. Add the finely hopped diced or grated tomatoes, then the crushed
garlic. Mix with a wooden spoon, add oil and vinegar, salt to taste,
beat. Pour into a plate and top with finely chopped parsley.

I've searched the web but nowhere can I find the calories in a special Greek dish known as "kyopolu" (aubergine puree). It's not just mashed aubergine though, it has about 7 ingredients, so please don't advise me to calculate it somehow myself.

We have this often at my house and I really don't want to give it up, just because there's no information on the package. Any help would be appreciated!
