Can you update Android OS manually like iphone OS?

Hi I was wondering if you can update Android OS on smartphone the way you update your iphone OS? or do you have to do it through your service provider? Like if I have a samsung galaxy S, do I have to wait until Samsung rolled out the update, or can I download it and update myself?
