Canaries Cruise in May - suggested excursions?

Two of us are doing a Canaries cruise with P&O in May, stopping in Madeira, Tenerfie, Gran Canaria, Seville (Cadiz), Lisbon and Oporto. We usually like wildlife, history, architecture, a bit of culture, scenery. Any suggestions for what we ought to see, and which places we should book trips for and which we can see on our own?
It's our fourth cruise so we have some idea what to expect, but haven't been to any of these destinations before.
 
One not to miss (which the ship will not tell you about) is a levada walk in Madeira. We have been twice and they are fascinating!

Get them to drop you off at the Botanical Gardens on the way back.
You walk through/down and they pick you up lower down.
Instead of taking you back to the ship direct get them to drop you at the flower market in Funchal, overwhelming!
 
Very little history/culture in the Canaries but Mt Tide is worth a visit, Madeira is very interesting too
I'd hire a Taxi to visit places of interest, the drivers make very good guides
Obviously, more culture in Portugal and Spain, Have a glass of Port in Oporto on me!
