I know that brown sugar must be carmelized before throwing the meat in the aluminum pot. Although I never understood it.
 
You don't need to caramelize brown sugar, prior to adding meat.

However, some people like to toast all spices, before anything else, since it releases their natural oils in this fashion.

And some, prefer to add spices at tend of cooking. :)

I prefer the first two.

The latter method, I mostly reserve for adding herbs, greens.

Now, don't forget the onions or all spice!!! :)
