Cooked roast lamb left out to cool overnight - is it ok to be curried today?

I roasted a lamb leg for dinner yesterday and the leftovers were still warm in the evening.
I went to bed forgetting to put the meat in the fridge and I was going to curry the leftovers this evening.
Don't really want to waste all that lovely meat.

What shall I do?

BTW It's quite chilly here and my kitchen is cool overnight.

Sorry - I would not take the chance.

Food has to be refrigerated. Bacteria could be building up and it could give food poisoning to your family.

When cooking meats, you can only leave them out for less than two hours at room temperature. That is because bacteria multiplies in this amount of time on foods that have moisture and neutral acidity and there is oxygen present. In two hours the meat contains more than a billion bacteria on it, so now, there is way more than that and could cause anyone to get food poisoned. Bacteria cannot be cooked out either as they protect themselves by hot and cold by forming spores.
