Cooking lamb in the crock pot, questions about recipe?

I have this really simple recipe, but I have questions because I've never cooked lamb or cooked in a Crock Pot.

1. I am going to use maybe 3lb of a leg of lamb which I will cut in 1 inch pieces.
2. I am going to boil chunks of peeled potato for 15 mins then place them with the lamb (bellow the lamb) turning them every hour or so

Question: When should I put the potatoes in? And can I not peel them just cut them into chunks?

3. Rub 1 tablespoon of butter over the raw meat

Question: Many recipes have a lot of different spices you can put on, but the spices I have in my cupboard are: cloves, basmati mix, curry, adobo, lemon peper salt, lemon juice, and salad seasoning....What of these should I use for spicing?

4. The recipe says I should cook for about 4-6 hours on high or 8-10 hours on low.

Question: I am using halal leg of lamb that has bone in it, will this effect cooking time? What is the difference if I cook on high or low?
Question: Also how much water if any should I put in the crock pot. Any other details I should know?
