cooking potato wedges or fries without butter/oil or salt?

I've kind of put myself on a self made diet where I don't eat anything processed or salted, and with as little oil/butter/fat as possible.

Does anyone know if there's a way to make decent potato wedges w/o the use or butter/oil and salt?

Or if anyone else knows of any good random recipes that would follow this
 
I'm a firm believer in olive oil actually, but since you want to do without, here are some ideas:

1. Cut your potatos into wedges and brush with fat free Italian or ranch dressing. Toss with grated parmesan and minced garlic. Bake until golden and crisped.
2. Cut baby red potatos in half and steam. Season with plain yogurt and lemon zest. Use a salt substitute or a little kosher salt and lots of fresh ground pepper.
3. Mash fingerling potatos with plain yogurt, garlic, and chopped green onion. Season with fresh ground pepper and kosher salt.

I like kosher salt because it takes less to get more of the flavor you want. A little goes a long way!
 
i'm not sure what you will consider processed as far as oils go...but something has to serve as a base to make any kind of seasoning "stick"...i use olive oil spray (it's like a cooking spray, but is just olive oil - in a can)...sounds gross, but you don't taste it once the potatoes are cooked. OR you can just use a scant amount of olive oil. Here's what i do:
Preheat oven to 425
I take 2 medium to large sized potatoes and cut them into wedges. Once they are all cut up, I put them into a gallon sized ziplock bag with like 1 tsp. of olive oil (or i spray them) and shake it until all the potatoes are covered. I then add black fresh ground pepper, oregano, basil and any other italian herbs (they do not have to be fresh, you can use the spice rack kind) and spices I have. I add minced garlic, too. I then shake up everything in the bag so that it's all evenly coated/ditributed. I then put them onto a cookie sheet and bake them until they look like they are getting a little brown and crisp...usually like 20 mins. after that, i put them onto a dish and sprinkle them with parmesan or romano cheese (like shaker pizza cheese), but you could omit that i suppose. They do taste really good though. Hope that helped.
 
Cut up the potato in wedges and grill them, or put them in an oven tray and spray them with water and sprinkle herbs or something nice one them.

Oven Fried Potatoes

3 potatoes, unpeeled
2 egg whites
1/2 c grated Parmesan cheese
1/2 t oregano

Cut potatoes into wedges, about 8 per potato. Beat egg whites. Mix oregano with Parmesan cheese. Dip potatoes in egg whites. Then roll in cheese/oregano mixture.Place on cookie sheet and bake at 375 degrees until browned, about 25-30 minutes.

Southwest Stuffed Potatoes

4-6 boneless, skinless chicken breasts
Figaro Liquid Fajita Seasoning
4 large baking potatoes
4-6 ounces light cheddar cheese, grated
green chili salsa

Wash and cube raw chicken breasts. Marinate in fajita seasoning. Bake potatoes 1 hour and 15 minutes at 400 degrees (adjust time for more or fewer potatoes). Spray Pam in a large skillet. Turn heat on high and pan fry chicken turning often, about 15-20 minutes. Open potatoes, top with chicken, salsa and grated cheese. This is a meal in itself.
