Corn Fritters???recipe?

yes I want them how do you make them, I will be making some heavy duty steaks tommorow Hockey will be around the corner and need some meat but I want corn fritters to go with these..and my cold Canadian Beer...YUM!
 
I use a can of cream style corn, chopped onion, corn bread mix to thicken and fry in hot oil. I'm sorry I don't have a recipe, I do alot of cooking by the eye. Salt and Lawry's coarse ground black pepper to taste.
 
Dixie Crossroads' Corn Fritters

Oil for frying
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
4 tablespoons sugar
2 eggs, beaten
1 cup milk
4 tablespoons liquid butter blend
1 cup whole corn, drained

Heat cooking oil to approximately 350 F.

Sift together flour, baking powder, salt and sugar. Combine eggs, milk and butter blend. Fold egg mixture into dry ingredients. Add corn last.

Drop by tablespoons into hot oil and deep fry about 5 minutes, turning periodically or until golden brown
 
This is my recipe taken from my own cookbook.

Corn Fritters

15 oz can corn
2 medium eggs
1 cup flour
1 tsp baking powder
1 tsp sugar

Drain the corn reserving ¼ cup of liquid from can, discard the rest. In a bowl combine corn juice and eggs. Use a whisk to beat mixture smooth. Add salt, flour, baking powder and sugar. Mix well, until there are no lumps. Add the corn and mix again.

Heat 1/4 cup of oil in a large skillet. When the oil is hot drop the corn mixture in skillet, 1 tablespoon at a time. Fry the fritters until brown on each side. Transfer to a plate lined with kitchen paper to soak excess oil. Serve.
