Could I replace egg noodles for regular pasta noodles in a mushroom stroganoff dish?

also, the recipe calls for red or white wine...if I wanted to use white, what kind of white wine would be best? a specific variety would be helpful. Thank you!
I should point out that this recipe does not call for beef. Just mushrooms, peas, and a sour cream sauce (with some other ingredients obviously...just no meat)

Yes, you can use regular pasta noodles. I would do something like a fettucini or maybe broken lasagna noodles. I am not a wine expert since I don't drink, but imagine the white wine would work.
