I think your strategy should work fairly well regardless of the number of owners. You'll find in such a small draft that depth is very easy to comeby, so your second TEs and 4th WRs and RBs could easily go a bit later if you feel the urge to switch things up. An issue I have with your strategy is where you take your defense. I would take a Defense before a QB3 any day. An elite defense can win a matchup for you. I ALWAYS take the kicker last, as even the worst of kickers can out-perform the elite.
