My dad just got diagnosed with diabetes two days ago. He has been told to not eat alot of things that we usually eat. so the whole family is going to eat like we are diabetics to get more healtier and not letting my dad feel out of eating yummies.
so Does anybody have links or recipes on mind that are..."sugar proof"??
ALso we just got a new vitamix blender so if you have any good smoothie recipes as well as others that would be helpful

Baked Chicken with Onions, Raisins, and Sunflower Seeds

(makes 4 servings)


refrigerated butter-flavored cooking spray
2 medium onions, thinly sliced into rounds
4 5-ounce (150 g) boneless, skinless chicken breast halves
2 teaspoons (10 ml) fresh thyme leaves or 1/2 teaspoon (2.5 ml) crushed dried
1 tablespoon (4 g) minced parsley
paprika
salt (optional)
freshly ground pepper to taste
1 cup (240 ml) dry white wine
1 tablespoon (12 g) margarine
1 tablespoon (9 g) golden raisins
1 tablespoon (8 g) unsalted dry-roasted sunflower seeds

1.Preheat oven to 400°F (200°C, Gas Mark 6).
2.Lightly coat a large nonstick skillet with cooking spray. Add onions and 1 tablespoon water. Cover and sauté over medium-low heat until onions are wilted, about 10 minutes.
3.Remove all visible fat from chicken breast halves. Rinse and pat dry with paper towels.
4.Transfer onions to a 2-quart (2 l) oven-proof casserole dish. Combine thyme and parsley. Sprinkle over onions.
5.Lightly sprinkle chicken breast halves with paprika and evenly brown the top in the same skillet. Place on top of onions and season with salt (if using) and pepper. Pour on the wine. Bake until chicken is browned and tender, about 20 to 25 minutes.
6.Meanwhile in a small nonstick sauté pan, melt margarine over medium-high heat. Add raisins and sunflower seeds. Sauté until raisins are plumped and seeds are lightly browned. Spoon over chicken and serve.
Per serving: 242 calories (22% calories from fat), 34 g protein, 6 g total fat (1.1 g saturated fat), 10 g carbohydrates, 2 g dietary fiber, 82 mg cholesterol, 549 mg potassium, 130 mg sodium

crust
2 tablespoons unsweetened applesauce
1/3 cup Splenda granular
1 egg white
1 1/4 cups flour


filling
4 egg whites
24 ounces fat free cream cheese (3 packs)
3/4 cup Splenda granular
2 tablespoons flour
1 teaspoon vanilla
2 tablespoons skim milk


Directions:Prep Time: 15 mins
Total Time: 1 1/2 hrs
1 For the crust: Cream applesauce, splenda, and the egg white; add flour. (You may need a tiny bit more applesauce - the consistency should resemble cookie dough.) Spread in the bottom of a 9" spring form pan and bake for 5 minutes at 450, remove and cool slightly.

2 For the filling: Cream the cream cheese, add splenda slowly, and vanilla. Cream in egg whites, add milk and flour.

3 Pour onto crust, and bake 10 minutes at 450; reduce the heat to 250 and bake an additional 60 minutes (or until center tests done.).

4 Cool to room temp, the refrigerate until chilled. Serve cold.

5 Note: My mom just tosses all of the ingredients into the mixer at once, but I think it comes out creamier if you mix them as listed.
