Gooey cinnamon apples recipe -- help!?

I have tried making cinnamon apples twice now using the two most popular online recipes. The first time they turned out pretty good but not great, the second time too soft and the sauce too thin. Does anyone know how to make those so the sauce can turn out GOOEY, rich, and THICK yet the apples won't be totally mushy? For lack of a better example, I want to make them very similar to the apples Outback Steakhouse serves.
