Help! My daughter needs a recipe for a meat dish to serve four-six....

...Anyone have a very simple family recipe? She is not comfortable making any of the recipes I have offered. I am 57 and rarely use a recipe. You know, a pinch of this, add this ingredient until it is this consistancy. She said I am making her crazy. I say she should have watched me closer. This is an important dinner, and she is not concerned with the cost, just simplicity. Please only tried and true recipes!
