How can you affect your body composition through nutrition?

I am underweight and I want to gain a few lbs.
My day usually consists of sitting and occasional walking since I am online-schooled.
I hear that carbs before bed attributes to fat gain because of insulin. What do you know about this?
I am increasing my calories to gain weight, but I want to know the time of day to eat certain foods. I want to know when to eat carbs, what kind of carbs to eat, like fruits/veggies, or complex ones like bread and oatmeal and what time to eat them at. What percentage of my calories should come from high protein foods? What types of muscle mass-building exercises can I do at home?

Please provide as much info as you can to answer my questions. Thank you!
