How can you edit the song information of mp3's downloaded off of youtube?

I frequently use youtube to find music that's not on iTunes. Unless there's a download link on the Youtube page, I use websites to rip the music off the site. However, when I do this, the music files on iTunes show up with the title as whatever the title of the youtube video was (usually something like "Artist - Song title (HQ)" instead of just the song title). This leads to a very unorganized music library! When I try to change the song info by right clicking the track, selecting "Get Info," and manually changing the title/artist/etc for the track, iTunes won't let me. Is there any way to get around this? Thank you.
 
If the song is playing ... or the file is opened ... it won't let you change the song's info through "get info".
