How come rapid fire striking in American Kempo doesn't work in sparring?

thats because people dont know how to strike, kick or kiai for that matter.
when you strike properly you only need a few inches to gain enough power, that coupled with the fact that there suppose to coincide with kyoshu points, to add to there effectiveness, and again they dont teach how to activate the points in his style of kempo

rapid fire does not mean no power it means speed.
you can still do this with both power and speed in less techniques and just as fast
 
In Ed Parker's American Kempo (as well as related arts like Kajukenbo and Limalama) I see them do demonstrations where an opponent throws a punch and freezes while the kempo artist throws a rapid fire series of like 20 punches, chops, and elbows.

When they spar, it just looks like kickboxing. They can't seem to do those rapid fire combos in live sparring.

From my experience, a really fast two strike combo is all you can do. By the time, you do a third strike, your opponent won't be in the same position.
