How do I make Royal Icing?

I want to decorate some cookies, is royal icing the one I should use? If so, how do I make it?

INGREDIENTS
2 egg whites
4 cups confectioners' sugar
2 tablespoons lemon juice

DIRECTIONS
Beat egg whites lightly and add enough sugar to make icing that will hold shape. Blend in lemon juice to get desired consistency. Be sure to keep icing covered, or else it will dry out.
