I'd like to prevent a buttercream frosting from losing its shape in a warm or humid environment.

I know buttercream frosting is full of butter so it will melt, but does anyone know of something I can add to make it not?

I'm icing cupcakes and the only way I can get the icing to hold is in the fridge.

I'm from Australian where Shortening isn't sold so any recipes without it would be appreciated.

keep the frosting in the refrigerator to let it get nice and cold. then when the cupcakes are done and have cooled put them in the refrigerator and when both are nice and cold take them out and ice them and stick them back into the refrigerator and keep them there untill serving. :)

I'm not really a baker...but I did help my sister when I was very young with her cake business...Buttercream...is a sensitive mixture..I would par freeze it..in the freezer for maybe 10 minutes....let it harden enough to not melt in the heat...but still pliable enough for spreading...just what we used to do on hot days.
