How do I to clear everything off an iPhone but still retain the Jailbreak?

Hey guys I've got a few iPhone 3G's that I got off of Craigslist and I was wondering how I could clear EVERYTHING off of them but still have the Jailbreak. I heard that going through the Reset menu and selecting "Erase all content and settings" also removes the Jailbreak but I'm not sure.

Help?
