How do you cook Leeks?

Cook only the white part the leaves can be used to FLAVOR stock. Take off the root and slice length wise and clean the sand. Slice them thinly and horizontally and saute' in butter and low heat until soften. Leeks are used in boulibase and gratain or use in clam chowder. You do anything with it just as you would use yellow onions except for salads.
