For a casserole, I would probably boil them (with their skins on) until just done. Cool them and they are easily peeled with your fingers). Keeping the skins on retains the nutrients better and makes peeling them easier later. Just don't overcook. Use a knife test.

Lastly, you may want to undercook them slightly if they will also be cooked further in a casserole

I like to cook sweet potatoes in the microwave before adding them to a casserole.

Pierce the sweet potato a few times with a fork, then put it in the microwave on high for 5 to 7 minutes, rearranging once. It'll be hot so you'll have to let it cool slightly before cutting it and adding to your casserole.
