Pretty simple for the funnel cakes, mix up a batter, drizzle it into hot oil and fry it up (recipe link below)! Make sure to sprinkle it with LOTS of powdered sugar before eating.

For french toast sticks, simply slice your slightly stale bread slices into thirds making long sticks.. then soak the sticks in a mixture of eggs with milk, salt, and cinnamon (optional) . Use about 1-2 tbl milk per egg. Use salt and cinnamon to taste. Soak each stick until they've absorbed all the egg mixture they can but you can still pick them up. Then fry in butter in a saute pan or, be truly decadent, and deep fry the sticks.

Funnel cake is so name because the batter is poured in a stream through a funnel into hot grease to fry. There are funnel cake mixes at most major grocery stores but here is a scratch recipe from the food network:

Funnel Cake with Powdered Sugar

Show: Dinner: Impossible
Episode: Major League Ballpark Challenge

1 liter canola oil
3 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 eggs
2 cups milk
1/2 cup powdered sugar, for sprinkling

Heat canola oil in deep-fryer to 350 degrees F.
Mix flour, sugar, baking powder, and salt. Whisk in eggs and milk. (Use 1/2 cup of batter for each funnel cake.) Pour 1/2 cup batter through funnel into hot oil, moving in a circular motion as you do so, to make each spiral-shaped funnel cake. Fry each spiral of batter until golden brown, about 2 or 3 minutes, remove with tongs and lay on paper toweling to absorb oil. Transfer to a plate and sprinkle powdered sugar through a sieve onto top of hot dough. Serve immediately.

My favorite variation of this is the Bostom Creme Pie Funnel Cake where you dollop the completed funnel cake with vanilla pudding and chocolate sauce.

You can also change the flavour of the base "cake" by adding different spices. Area state fairs also offer a pumpkin flavored one that's excellent. So don't be afraid to experiment.

Funnel Cake
Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make a funnel cake.
Funnel Cake Ingredients
For this recipe, you will need:

* 1 cup flour
* 3/4 teaspoon baking powder
* 1/4 teaspoon salt
* 1 egg
* 1 cup plus 1 tablespoon milk
* 2 tablespoons sugar
* powdered sugar

Combine the Funnel Cake Ingredients
First pour the flour, baking powder, and salt in a bowl. Use a whisk to mix these dry ingredients together.

Then, in a different bowl, crack and place the egg and then pour in all of the milk. Beat the egg and milk together.

Next, add the sugar and then stir to dissolve the sugar into the other wet ingredients.
Beat the Ingredients
Add the dry ingredients into the wet ingredients in parts. Then, use an electric mixer to beat it smooth.
Pour the Batter Into a Skillet
Now, pour about 1 inch of oil into a skillet. Heat it over medium heat until it reaches 375 degrees. This may take about 10 minutes.

If you have one, you can pour the batter into a funnel and then let it run in and around the pan. I'm going to just pour the batter into a measuring cup, and then make circular shapes with the batter in the oil.
Cook the Funnel Cake
Cook for a few minutes until you see it is golden brown. Use tongs to carefully flip the funnel cake.

Let it cook on the other side for another minute, and when it's completely golden brown, take it out of the oil and let it drain on paper towels.

Sprinkle with powdered sugar or use other toppings such as fruit or syrups. Serve warm and enjoy.

french toast sticks are eeasy. Just get a few slices of bread. Cut them into strips. Dip them into an egg batter (like 3 eggs, a little milk, some cinnamon and a pinch of sugar-whisk it up and thats the batter ;o) so you dip them in there for like...5-10 seconds. throw them in a frying pan with a little oil and a little butter and there ya go!....you can even put them into the broiler for a minute or two afterwards to get them REALLY crispy. yum! i want breakfast ;0) and you can buy funnel cake mix at the Cracker Barrel and even at some supermarkets.
