How do you season a chicken under it's skin?

It's supposed to make the chicken more flavorful to season it between the skin and the flesh. How do I do that? Do I need to take the skin off, and then lay it back on? Is there a good technique to do it right? Thanks
 
Just lift the skin and slip in herbs and seasonings. You don't have to remove it.
 
buy a injector ( you can get them at walmart,target ect) you can make your own sauce just make sure the spices are ground in a food chopper and will go through the needle or you can buy already made sauces that are made for the injection. Makes very tender juicy chicken
 
you could do all that stuff other people suggested or just soak it in a marinade, that will flavor it right through the whole chicken
 
There is a kitchen accessory called a flavor injector that looks like a large hypodermic needle. In my experience these are the best way to flavor the meat under the skin. You can find this "tool" in the kitchen section at a store called "linens -n-things",or even local grocery stores probably have them.
 
I take it this is a whole chicken? Starting at the top of the breast area, using your fingers, lift the skin away from meat, and then from that small entry work your fingers back and also down towards the legs. Slide your herbs and flavorings underneath and then spread it around to coat as much area as you can underneath the skin. This is a great way to add flavorings and it works wonderfully. The skin will stay intact and your chicken will taste wonderful! I usually use some minced garlic and fresh thyme, but a mix of dried herbs works great too!
 
It's pretty easy to lift the skin and work it away from the flesh. Leave it attached, though...don't comopletely remove it. Just lift it and work your fingers between the skin and flesh to loosen it. You don't have to do the whole chicken...the breast and thighs are enough.
