How much is a pinch of salt and, how does it effect a recipe?

I've been wondering this for a while now. Usually a recipe calls of a pinch of salt. My taste buds are not very good, so maybe I am missing something favor-wise. Or, isn't scientific that happens when you add salt to a dish?
