How to manually overide vram settings on MacBook Pro?

I'm trying to run the recently released Skyrim on my MacBook Pro 13" Mid 2010. However when I try to run the game, the graphics are very choppy even on the low detail setting. I have 8gb of normal 1066mhz ram and I was wandering if there was a way to manually overide the vram allocation to say either 512mb or 1028mb of vram. It is currently using only 256mb of vram. I'm thinking this may be possible because the the "normal ram" and "vram" are shared throughout the entire 8gb.

PS. the graphics card is an NVIDIA GeForce 320M
