How would gas get in my oil in a 1991 nissan 300zx?

My car messed up again as usual, I filled up my car with water was on my was home from about a 200 mile trip, but i did not even make it 80 miles before my car over heated, i was driving about 80 mph on the interstate, and my car jumped from little below half to all the way to the H on the temp gauge, so i pull over as soon as it happens, shut it off and put it in Neutral and fill it up with about 4 gallons of water drive down the road about 20 miles and all the water is gone so long story short i blew my head gasket and transmission from the tow home, and replace my transmission, and my head gasket, check for warped none, and put it back together, and bought new fan clutch, and fan blades, electric condenser fan. the water pump thermostat and cooling lines were all replaced about a year ago, the water flows good as far as i can tell, also the radiator is almost new about 2 years old, any ways, i get it together and after driving it or letting it idle for about 10-15 minutes it starts going over 1/2 way at that time i shut it down, I had changed the watery oil while replacing my head gasket, so i take off my manifold, and reconnect my fuel rail and no leaks, also the all fuel injectors were replaced with reman ones a few months ago then i cranked my car and ea. fuel injector sprayed equal amounts of gas, SO my question is could the oily gas and overheating both be caused by a cracked head somewhere on the intake valve leading to the oil circulation holes from the over heating?
