...want to get a 30 inch stove/vent.? I was already told by the folks who installed my countertops that when I get the new stove they will come back and put a piece on the sides so that food won't fall down in between the spaces. So how do I go about the microwave or exhaust hood? Do I buy a 30 inch hood instead of 36? The space is 36 inches wide not the standared 30. Do contractors have some special installation for this type of issue?

You can get either a 30 or a full 36". If you do a 30 " you ll need 2 - 3" fillers to go on each side to fill in the gap, very common practice.
If by chance you have no upper cabinets to put a filler (s) You can get more of a decorative vent fan , and I d suggest a full 36" vent to match the width of your stove.
