i have a vw polo and have a small problem?

the car is 15 years old and two weeks ago i changed the head gasket the head did not need skimming so i didn't i rebuilt her and then she sat for about 2 weeks whilst i sorted a problem with the water pump i've just driven her to work about ten miles and have checked the oil filler cap and there appears to be some fresh mayonnaise in there i am puzzled as to why any help greatly appreciated
yep oil changed but saved money and didn't change the oil filter doh! will run her in for another 30-40 miles and see were i get to sound good?
 
change the oil after you did the head gasket? if not the answer is duh. if so the answer is that it's really time consuming and difficult to get all the water and anti-freeze out of all the water journals so your bound to have a little mayo in the oil pan after. try changing the oil again and if you still have the same problem after driving it then your head is warped and you need a new head.
