I need an idea for a spanish project. I have to create a holiday.?

I have to create a holiday on anything (high school appropriate haha =[ ) But... it has to have a mascot, and a description of how it started (10 sentences). Any ideas?
It doesn't have to be related to spanish
 
The day of the TORTILLA! They are a used in every meal. Same with beans.
