I need to make something/anything with nothing but stuff from the outdoors....

"No knives or tools or anything" eliminates just about EVERYTHING. If you are allowed basic stone-age tools, then you may try making spearheads by breaking rocks or obsidian. You can try fire-building. You can construct animal traps and snares. You can build a canoe from bark and use roots for binding and sap for sealing. You can make moccasins if knives and leather are in the mix. You can stone-grind grains for oatmeal or bread if you are allowed stone tools. Most human activities involve contamination with tools at some point in the process. That may be the lesson intended by your instructor. You may want to look at the Foxfire books on primitive homesteading for ideas.
