One book that describes escape attempts is The Colditz Story. http://www.amazon.co.uk/Colditz-Story-Cassell-Military-Paperbacks/dp/0304358126/ref=sr_1_1?ie=UTF8&s=books&qid=1263592268&sr=1-1 Colditz Castle was where the most determined escapers were sent.

Others are The Great Escape http://www.amazon.co.uk/Great-Escape-Cassell-Military-Paperbacks/dp/0304356875/ref=sr_1_1?ie=UTF8&s=books&qid=1263592433&sr=1-1 and The Wooden Horse http://www.amazon.co.uk/s/ref=nb_sb_ss_i_1_12?url=search-alias%3Dstripbooks&field-keywords=wooden+horse+eric+williams&sprefix=wooden+horse

Ian has some excellent selections. Here are a couple more:

'Escape from Germany' by Aidan Crawley, 1987. A complete book on escapes from POW camps in Europe by the Allied nations during WW2.

'Horned Pigeon' by George Millar, 1987. Experience of a POW who escaped and his subsequent journey out of occupied Europe.

SOE (Special Operations Executive) Set up by Winston Churchill during WW11 to attack Germany and its allies. Some fantastic gadgets such as exploding rats. Even a plan to shoot Hitler which nearly worked. Google it now.
