new potatoes. Help with cook time? I am worried about the veggies becoming mushy. I would not add liquid as I have read in various places that "roasting" them is better and they make some of their own liquid. Just worried about cook time since I won't be there to monitor.
 
You can't cook in a crock pot without liquid. You'll burn the food. Crock pots will not roast food.

You can roast the potatoes in the oven separately. Maybe be about 20 min or until tender at 350 F.

Cook the chicken with stock or water. You can add the beans right before the chicken is done. Shouldn't take any longer than 45 min.. You can check the chicken with a meat thermometer (165 F) or you can cut one open to see if it is done. Don't leave them in too long.... they'll become overcooked and fall apart. Check them after 20 min.

Or, you can add the potatoes to the crock pot. They'll take about 20 min..

As for your vegetables you want to eat, place them in the crock pot about 35 minutes before you're ready to eat, especially cut-up potatoes.
I was watching Food Network, and their recipe for Cornish Hens sounded really good!
(PS Would you be willing to please list how your recipe turned out? I've yet to try hens. Thanks!)
