Ipod touch help-deleting items?

I did something to my ipod touch the other day when I made all the apps go all wobbly with a small X in the corner and I could delete them straight off the ipod, without having to do it through itunes.

I need to do it again but I have no idea what I did before, can anyone tell me how to do this again??
