I am 5'7'' and weigh 275 pounds, i recently created my own diet that consists of a grilled chicken sandwich on wheat bread with 1 slice of cheese for each meal. Calculating the calories it comes out to 331 calories each meal or 662-991 calories each day depending on whether or not i have time for breakfast. I exercise everyday unless school doesnt allow it, trying to stay on a regular diet in college is tough, i do strength training everyday, and i also do 30 minutes of cardio each day. I usually try to drink 1 Gatorade each day, but other than that i drink only water. Does this sound healthy for me, or am i trying to lose too much weight while still trying to put on muscle?

some people go by a 2000 calorie diet but if your going by a 1000 i'd say that's fine just try not to snack to much

No.

You'll need at least 2,875 calories to maintain your current weight and activity level.

Of this, 2,210 calories are required to meet your body's basic energy needs. That amount (your resting energy expenditure) is what you'd use up if you did nothing but lie in bed all day.

To lose about one pound per week, you'll need to cut back to 2,375 calories per day.

Here's the website where I got this. These are also the numbers if you didn't do any exercise.

That sounds like too little calories. If you take in too few calories, all you do is to tell your body that there is a famine and to survive your body goes into survival mode which means that your metabolism slows down (OK, the exercise might help for that), but what acutally happens is that your body clings for dear life to every bit of fat and make the most of each little calorie in order to survive.
Find out from a reputable dietician what your ideal calorie intake should be.
